    Dear,

    It's Pretty Simple.
Official Ginnger Bread Version has already been launched by Soy for your Device.
You can easily Update your device with Latest Available Version by Service centre of Sony for free.
Apart from it follow the steps mentioned below.
    -Go to Settings>>>About Phone>>>Software Updates>>>Check for Updates
    Install it on your device.

    Pleasure to help you...!!!

The official upgrade of the phone W8 to Gingerbread is not possible but you can upgrade your phone unofficially for that you have to follow the process.
Make sure you have the following 1.Phone
    2.Data Cable
    3.PC
4.A Rom from XDA developers(Sony Ericsson X8 thread)
    The Procedure for Installation.
    1. Download Super one click root and then install it on your PC.
2.Connect your phone to the PC making sure USB debugging is enabled in settings->applications->development. Also ensure that you have all the drivers necessary for the phone to be detected by the computer.
3.Follow the on screen procedure on the application.
    4. Download Root explorer.apk and Xrecovery files from xda-developers.com in the "Sony Ericsson X8" thread.
5.Install Root Explorer using any file manager and place the xrecovery files in System/bin folder
    6.You have recovery installed.
7.To boot into recovery switch off the phone and restart it and hit the back button repeatedly until it boots into recovery.
8.Once it is booted into recovery make a Nandroid Backup.
    9.After that make a Data wipe/Format
    10. Place a Rom on your SD card and select "Install .zip from SD card"
wait till it gets over and reboot. You have GB running in your Phone.
    Hope this Helps

The updation is not a big deal. But updating the software by your own may give chance to problems to be occur. You better leave it to the service centres. Anyway, I will tell you the steps.
First, turn on your phone and go to menu and click on settings. Secondary, find the option named "About phone" and click on it. You will then have everything(entire information) about phone like which software it consists etc . You just go click on software update and then select "check for updates". That's it. Then you are done. Enjoy the new software on your phone:-)
